Lemon Biscuits

Ingredients:
1 x Ripe Lemon
250g Butter
1/2 x Tin Condensed Milk
1/2 Cup x Sugar
2 1/2 Cups x Self Raising Flour


Pre Heat Oven to 180deg Celsius.
Cream Butter and Sugar.
Add Condensed Milk and beat with electric mixer until well combined.
Add Flour and mix until well combined.
Add Rind and Juice (aprox 2TBs) of One Lemon, Mix through batter.

Roll Mixture into tea spoon size balls, placing on a Baking tray lined with Baking Paper.
Press each Ball down with a Fork.
Bake for 10 - 12min until the bottom of the biscuit is browned.
Cool on Wire Rack.






Makes Aprox 60 x Biscuits.

Sweet and Sour Chicken- Gluten Free

Gluten Free Sweet and Sour Chicken.


Ingredients: 
3 x Chicken Breast's
Salt and Pepper
1 x Cup Cornflour 
2 Eggs, beaten
1/3 Cup Oil of choice




Cut Chicken into 1 inch cubes. 
Season with Salt and Pepper. 
Roll Chicken in Cornflour and then roll in Egg. 
Heat oil in large Skillet. 
Cook Chicken until browned. 
Place in Baking Dish.




Make Sauce... ...


Sauce:

1/2 Cup Sugar
4 Tablespoons Tomato Sauce
1/2 cup White Vinegar
1 Tablespoon Soy Sauce (Use Gluten Free if making GF meal)
1 Teaspoon Garlic Salt

Whisk until smooth. Then pour evenly over Chicken. 
Turn chicken so the sauce gets on both sides and then put in the oven at 180 degrees for 15 minutes. 
Turn chicken and cook another 15 minutes.




Serve on Rice.

Baked To Perfection - Veggies

Crunchy on the outsize, with a caramelized coating and fluffy, soft insides... The Perfect Roasted Vegetable.

2 x Sweet Potatoes
2 x Potatoes
2 x Carrots
3/4 cup aprox Lard

Pre-Heat an oven to 200 degrees centigrade.
Place Lard into Baking Pan, you want enough Lard so that the base is covered completely about a cm high **once melted.
Put Baking Pan into the oven, the Lard needs to be boiling hot before adding the Veggies.
Peel and Chop Veggies while Lard and oven are heating up.
Boil the chopped Veggies in Water until soft enough to be poked into with a Fork.
You know the Veggies are ready to be added to the Lard when the Lard boils and bubbles when a Potato is placed into the Baking pan.
Put the drained Veggies into the Lard and bake in the oven for aprox a hour, turning the Veggies occasionally through cooking time.
Once cooked drain on paper towel before serving...

Creamy Garlic Chicken Stir-fry

A Gluten Free, Dairy Free Creamy Garlic Chicken Stir-fry that's a hit with the whole family, and SO easy to make!

Ingredients:
2 x Chicken Breasts
1 x Head of Broccoli
2-3 x Carrots

1/2 x A Capsicum
1 x Can Coconut Cream
2 x Cloves Garlic

1 x Tbs Olive Oil
Salt and Pepper to tastes.


Crush in a garlic crusher.
Heat Olive Oil in Pan/Wok.
Add the Garlic to Olive Oil.


Dice up the Chicken breast, Add to Garlic and Oil.
Chop up the Carrots, Broccoli and Capsicum, also add these to the Pan/Wok.
Stir in the can of Coconut Cream.
Add Salt and Pepper to taste...
Cook until Chicken is ready and veggies are soft.


Serve on Fluffy Rice.

Toddler "Chocolate"

This is a treat/snack I like to make for my Boys, they believe it to be Chocolate...Even I nibble them myself when craving a sweet treat.

Ingredients:
Pitted dates
Cocoa Powder

Chop a small handful of dates into bite size bits.











Pop the Dates in a ziplock bag and about 1/2 a teaspoon of Cocoa powder, shake/mix the dates in the bag so they are well coated in Cocoa. 










That's it!

Gluten Free Chocolate Cake

Ingredients
1 Can Red Kidney Beans - Washed/drained.
1 Tbs Vanilla Essance
1 Tbs Water
125g Butter
5 Eggs
1 Cup Sugar
1 Cup Coco powder
1 Tsp Gluten Free Baking Powder
1/2 tsp Bicarb Soda




In a Food Processor blend Kidney Beans, Vanilla Essence, One Egg and Water until smooth - Set aside.











In a separate bowl cream Butter and Sugar.
Add 4 Eggs and beat until well combined.

Mix Kidney Bean Purée to Egg/Butter/Sugar Mix, Mixing until smooth.














Add Coco, Baking Powder and Baking soda, blend one last time until all mixed together.









Grease a Ring Tin and Bake in a 180deg Oven for 40 - 45min or until skewer comes out clean when inserted into cake.







Don't be put off by the addition of Kidney Beans, unless you saw the recipe there is no way to know! This is Rich, Moist Chocolate Cake!

Carpet Stain Remover for under a $1

So I have some carpet that was absolutely HORRID! In a desperate attempt to try revive the carpet I decided to try Velvet soap... Which is Laundry/cleaning/soft/pure Soap, it's very cheap!



I grated about a Tablespoon of the soap into a large bowl of very warm water and using a cloth (tightly rung after dipping into soapy water) lightly rubbed the carpet, not allowing the carpet to become "wet" just damp.

It did take me about 2 hours to cover the entire carpet space and it did turn into a workout, but once it dried completely I was shocked at how amazing my carpet smells and looks!

( I saved some carpet to see the before and after effect )

Dump Truck Birthday Cake

This was my son's 2nd birthday cake.

I made Chocolate Truffles and Cake Balls and stacked them in the back of a Truck (which was a gift for his birthday).






Was a hit with the birthday boy!










Chocolate Truffles

Ingredients
227 chocolate, cut into very small pieces
1/2 cup cream
2 tablespoons butter, cut into small pieces
2 Tsp essence flavour of choice
2 Packets Chocolate ripple biscuits.

Heat Cream and Butter in saucepan until just starting to boil.

Poor hot cream over chopped chocolate and stir until completely melted.

Divide mixture evenly between 2 bowls, flavouring each one with your choice of essence. (I used Orange essence in one and Peppermint essence in the other.)

Cover and place in the fridge to set until firm (couple of hours or over night).

Using a food processor grind chocolate ripple biscuits until fine, you want to add a little under a packet to each bowl of Chocolate, the remaining crushed ripple biscuits are to roll your truffles in.

Once you have added your chocolate ripple biscuits, mix until well combine and roll small balls, each ball then need to be rolled in and coated with the crushed chocolate ripple biscuits.










Cake Balls

You will need:
One baked Chocolate Cake
Frosting
300grams Chocolate
2 TBS Oil

Crumble cake with  fingers into a bowl.


Then mix just enough frosting through that will allow the cake to hold together when moulded into balls.



Roll the cake mixture in balls, you can roll them as big or as small as you like.



Once you have rolled all your cake balls freeze for a couple of hours or over night.


From here all you need to do is melt your chocolate and add the oil to the melted chocolate, the oil will thin the chocolate, making it easy to dip and coat the balls of cake.

Place chocolate dipped balls onto baking paper while setting.








Enjoy!

DIY Earring Holder.

I have lots of dangly earring's that I found very hard to store.

Here is a super cute way to store Earring's that's practical, looks great, easy to make and cheap! Total cost for me was $5!



You will need:
A Frame (size of your choice) without glass that has a back, It can't just be the empty frame.
Piece of Shade Cloth or Mesh Fabric cut to size.













Remove the back from the frame and lay the cloth over the frame allowing it to overhang the sides, then place the frame back onto the fabric pulling the fabric tight and it slips into place.













Trim the excess fabric and pin frame back into place...















Done! Now your ready to hang your frame...

Spicy Sweet Potato and Roast Capsicum Dip

Ingredients:
1 LARGE Sweet Potato
1 LARGE Capsicum
1 Clove Garlic chopped fine or crushed.
Pinch Slat
Cracked Pepper
1/2 a Fresh chilli
2 Tbs Balsamic
2 Tbs Olive Oil
Water


Pre heat your oven to 200 degrees.

Chop sweet potato and Capsicum and bake in the oven for aprox 40min or until sweet potatoes are tender and capsicums blistered.


















Once cooked Add Capsicum to food processor and blend followed by the Sweet potato and Blend until smooth.

Add all remaining ingredients and mix very well... Use the water to thin the dip to the desired consistency.






















Curried Egg's

Ingredients:
4 Eggs
Pinch Salt
1 - 2 Tbs Curry Powder
2 Tbs (aprox) Mayonnaise


Place eggs in a saucepan filled with cold water, put to boil on 'High' for 14 minuets.

Once Egg's are cooked, peel and smash with a fork












Once you have smashed the eggs, add Mayo, salt and Curry powder and mix well.












Serve!

Chickpea Burgers

Ingredients:
1-2 Garlic Cloves minced/finally chopped
1Tbs Curry Paste
1 Carrot Peeled and grated
1 Can Chickpeas (drained and washed)
45g Cashews
40g Fresh Bread Crumbs
Flour

Blend Cashews, set aside.
Cook Garlic and Curry for 1 minuet.
Transfer to food processor and add Carrot, Chickpeas. Blend.
Add Breadcrumbs and Cashews and mix well.

Make patties with your hands and roll in flour.

Cook on a oiled pan until both sides are lightly browned.



Serve with Spinach, Natural Yoghurt or Sour Cream. We had ours in Sour Dough buns -











Blueberry Sauce

This Blueberry Sauce is great for topping Ice Cream or mixing in Yoghurt!


2 cups fresh blueberries
1/4 cup sugar
1 tablespoon Lime juice
1/4 teaspoon salt
1/2 teaspoon vanilla extract

Blend Blueberries and add sugar, Salt and lime Juice.

Bring to a boil and boil for aprox 1 minuet.

Add Vanilla...

Chill.

Easy!



Roasted Chickpea's

These have beautiful Crunchy shells, almost like a chip? Great snack.

Ingredients:

  • Aprox 2 tablespoons olive oil
  • 1 1/2  Tbs Cajun Spice.
  • 1 teaspoon Garlic powder
  • 1 pinch Sea Salt
  • 1 pinch ground Black Pepper
  • 1 can chickpeas, rinsed, drained and dried. 
  • (You can be creative and use any spice/combination you like)

Pre heat your oven to 175 Degrees.

In a bowl mix Olive Oil and Spices together.












Add chickpeas, mix and place chickpeas on a lined oven tray, bake for aprox a hour ot until chickpeas have a crunchy shell.




















Serve Warm.

Homemade Dinner Rolls

Lots of you have been asking for my dinner roll recipe - As promised here it is!

Ingredients: 
1C plus 2 Tbsp warm water
1/3 C oil
1 1/2 Tbsp yeast
1/4 C sugar
1/2 tsp salt
1 egg
3 1/2 C flour

Heat oven to 210 degrees.

In your food processor or bowl combine the water, oil, yeast and sugar and allow it to rest for 15 minutes.  
Using your food processor or muscles/wooden spoon mix in the salt, egg and flour. 
Knead until well incorporated and dough is soft and smooth. (Just a few minutes)
Form dough into 12 balls and then place in a  lighty greased ( i use butter) 9 x 13 pan and allow to rest for 10 minutes so it starts to bulk.

Bake for 10 minutes at 210 degrees or until golden brown...


Easy!

Vegetable Curry Bake (EASY!)

Ingredients:
Head of Broccoli
Quarter Head Cauliflower
3 - 4 Medium Potatoes
Half a Onlion
4 Cloves Garlic - peeled
2 Large Carrots
1 - 2 Chicken Breasts (Optional)
2 Tbs Curry Powder
300 - 400mls Cream

Pre heat oven to 190.

Chop all Vegetables and optional Chicken and put them in a oven proof dish.













Add Cream and Curry powder, mix...















Bake for aprox a Hour until all Vegetables are soft when poked.









Learning to Crochet Flowers.

I decided I wanted to learn how to make crochet flowers...

Following this tutorial I was able to come up with some creations that most definitely resembled a flower!



Although I still need to practice as my flowers are a little shabby, its a great fun creating woollen flowers.

Zucchini Hot Chips - Baked - Kid friendly food!

Zucchini Hot Chips Ingredients:
1 -  2 Zucchini's depending on size.
Dried Bread Crumbs Aprox 2 Cups
2 Eggs
Cajun Spice mix (wont make it too spicy for little ones, mild flavour and totally optional)
Salt
Spray Oil


Pre heat your oven to 220 degrees.

Cut Zucchini into 'Fries'. Do this by first cutting the the Zucchini to the 'length' your chips will be, then you will need to slice the lengths into fries, as shown below...
























Set aside.

Beat the 2 eggs with a couple of good shakes of the Cajun Spice.


















coat the Zucchini pieces in the Egg.













Then roll the eggy Zucchini in bread crumbs.













Line up on a tray covered with baking paper and a light spray of Oil.













Sprinkle VERY lighty with a little extra Cajun Seasoning and light spray of oil.

Bake for 12 - 15min

Salt lightly before serving...

















They are sooooo good! My Toddler LOVES them!
