Shortbread - Traditional - Family Favourite

Melt in your mouth short bread!


Ingredients:
250g Butter at room temp
1/2 Cup Caster Sugar
1/2 Cup Rice Flour
2 Cups Plain flour













Step One:
Cream butter and sugar till pale.

**I'm using my food processor today, however you can use an electric hand beater and get the same results.






Step Two:
Gradually add flour until combined.










Step Three:
Add Rice flour and mix well, until all combined.










It should look like a dry crumble mixture.











Step Four:
Tip out onto clean surface and kneed into a dough.









Dough should be smooth and compact like this.










Step Five:
Break dough in half and roll both halves into long cylinders. 









Step Six:
Using a sharp knife, Slice biscuits. 










Step Seven:
Poke each biscuit 3 x with a fork.
Cook in pre-heated oven at 150 for 40min or until bottom is lightly golden.









Step Eight:
Once cooked, remove from tray using a spatula and cool on wire rack.











Light, melt in your mouth shortbread!
*Fancy them up by dipping in melted choc and leaving to set.

Basic Sausage Rolls

This is a humble basic sausage roll - easy and quick to make!
Feel free to add veg to the mix, like grated carrot perhaps.

Ingredients:
1 1/2 Tablespoons Tomato Sauce
1/2 cup Breadcrumbs
1 teaspoon (aprox) salt
500g Sausage mince
1 Egg
1 Tablespoon milk
2 sheets puff pastry - defrosted.











Step One:
Mix sausage mince, Sauce, salt and breadcrumbs in bowl.









Mix until well combined.











Step Two:
Make an 'Egg Wash' using one egg and some milk, whisked together.









Step Three:
Cut puff pastry squares in half - lay on chopping board.









Step Four:
Roll out a portion of sausage mice and lay across the puff pastry.
Egg wash either side of the sausage mince.








Step Five:
Roll puff pastry.










Step Six:
Slice using a sharp knife into party sausage roll size.









Step Seven:
Cook in a 200 degree oven for 20 - 30min or until golden brown.












Chicken Steaks

These Chicken steaks are so nice you won't want to buy a box chicken steak ever again!
They can be made at any point in the day, then sealed and stored in the fridge until it's time to cook them for dinner.


Ingredients: *All ingredients are approximates

1/2 Cup plain flour
1  Egg
1  Cup Bread crumbs
3 - 4 Cloves of Garlic or Crushed Garlic
Salt
60g Butter
1 Chicken Breast






















Step One:
Flatten out chicken breast.
I use a rolling pin and a sheet of glad wrap
*Bang, Bang, Bang* ;o)


















Step 2:
Cut chicken breast in half.
I have also sliced a small third part off the chicken breast for my toddler.


















Step Three:
Roll chicken in flour seasoned with a pinch of salt.




















Step Four:
Dip floured chicken into beaten egg.






















Step Five:
Sprinkle some of the crushed garlic over chicken and transfer to a plate covered in bread crumbs - garlic side down.


















Step Six:
Sprinkle crushed garlic over second side of chicken and proceed to roll in bread crumbs, until well covered.


















Step Seven:
Place crumbed chicken into a oven safe dish with a chunk of butter under each piece of chicken.


















Step Eight: 
Dice/slice remaining butter over and around chicken, with each chicken piece getting a large butter chunk on top.


















Step Nine:
Cook in a pre-heated oven at 190 for 30min turning once halfway.
< This is what they look like halfway.


















They will be golden brown once cooked.



My toddler loves these steaks!

Favourite Pikelets

This is my favourite Pikelet recipe made even better served with Jam and whipped Cream.
Makes Aprox: 15


Ingredients:
1 x Cup Self raising flour
1/4 teaspoon bicarb soda
2 x tablespoons Caster sugar
1 x Egg
1/2 Cup Milk
2 x teaspoons Oil
Butter for frying.












Step One:
Mix all dry ingredients together.

1/4 teaspoon bicarb soda
2 x tablespoons Caster sugar







Step Two:
Mix all wet ingredients together in a separate  bowl.

1 x Egg
1/2 Cup Milk
2 x teaspoons Oil







Step Three:
Make a well in dry ingredients and mix in wet ingredients with a whisk until smooth.











Step Four:
Heat frying pan to medium heat.
Have a plate ready to put cooked pikelets on.
















Step Five:
Using a tablespoon, spoon a small amount onto a buttered pan.
They will be ready to flip when you see small bubbles and the bottom side is golden.


















They should look like this when you turn them.

















These Pikelets are VERY fluffy and very light.














Done! 
(Don't foreget the Jam and cream!!!)



Carrie's "Fried Rice"

This is NO traditional fried rice...
Its the kind of meal you can make with whatever vegetables you have left in the fridge, or the vegetables you like to eat.



Very tasty and easy.


Ingredients:

2 x Carrots
1 x Red Capsicum
1 x small head of broccoli
4 x Eggs
3 x Bacon rashers
2 1/2 cups rice (uncooked)
Olive Oil
Soy sauce
Season All spice






Some additional vegetables that would be great added are peas and corn - My husband doesn't like these so we have left them out.


Step One:
Set rice to cook using absorption method if on stove top or set to cook in rice cooker. 


Step Two:
Dice bacon rashers and fry in Wok, once cooked remove from wok and sit in bowl.


Step Three:
Crack 2 eggs into bowl, whisk and add a sprinkle of Season all spice.





















Cook into a omelet in the Wok. 
Repeat with renaming 2 eggs.

Once cooked cut into small squares.
















Step Four:

Dice vegetables into small pieces. 
Add aprox 2 - 3 tablespoons of olive oil to the wok and cook diced vegetables until just soft.
















Remove the cooked vegetables from the Wok and place in bowl.













Step Five:
Add aprox 4 - 5 tablespoons Olive Oil to Wok, then add cooked rice and "fry" the rice for 2 - 3 minuets.












Step Six:
Add Veg, egg, bacon to the rice and mix well.














Step Seven:
Add Soy Sauce to taste.
Mix well.




















DONE!
