Toddler "Chocolate"

This is a treat/snack I like to make for my Boys, they believe it to be Chocolate...Even I nibble them myself when craving a sweet treat.

Ingredients:
Pitted dates
Cocoa Powder

Chop a small handful of dates into bite size bits.











Pop the Dates in a ziplock bag and about 1/2 a teaspoon of Cocoa powder, shake/mix the dates in the bag so they are well coated in Cocoa. 










That's it!

Spicy Sweet Potato and Roast Capsicum Dip

Ingredients:
1 LARGE Sweet Potato
1 LARGE Capsicum
1 Clove Garlic chopped fine or crushed.
Pinch Slat
Cracked Pepper
1/2 a Fresh chilli
2 Tbs Balsamic
2 Tbs Olive Oil
Water


Pre heat your oven to 200 degrees.

Chop sweet potato and Capsicum and bake in the oven for aprox 40min or until sweet potatoes are tender and capsicums blistered.


















Once cooked Add Capsicum to food processor and blend followed by the Sweet potato and Blend until smooth.

Add all remaining ingredients and mix very well... Use the water to thin the dip to the desired consistency.

Roasted Chickpea's

These have beautiful Crunchy shells, almost like a chip? Great snack.

Ingredients:

  • Aprox 2 tablespoons olive oil
  • 1 1/2  Tbs Cajun Spice.
  • 1 teaspoon Garlic powder
  • 1 pinch Sea Salt
  • 1 pinch ground Black Pepper
  • 1 can chickpeas, rinsed, drained and dried. 
  • (You can be creative and use any spice/combination you like)

Pre heat your oven to 175 Degrees.

In a bowl mix Olive Oil and Spices together.












Add chickpeas, mix and place chickpeas on a lined oven tray, bake for aprox a hour ot until chickpeas have a crunchy shell.




















Serve Warm.

Zucchini Hot Chips - Baked - Kid friendly food!

Zucchini Hot Chips Ingredients:
1 -  2 Zucchini's depending on size.
Dried Bread Crumbs Aprox 2 Cups
2 Eggs
Cajun Spice mix (wont make it too spicy for little ones, mild flavour and totally optional)
Salt
Spray Oil


Pre heat your oven to 220 degrees.

Cut Zucchini into 'Fries'. Do this by first cutting the the Zucchini to the 'length' your chips will be, then you will need to slice the lengths into fries, as shown below...
























Set aside.

Beat the 2 eggs with a couple of good shakes of the Cajun Spice.


















coat the Zucchini pieces in the Egg.













Then roll the eggy Zucchini in bread crumbs.













Line up on a tray covered with baking paper and a light spray of Oil.













Sprinkle VERY lighty with a little extra Cajun Seasoning and light spray of oil.

Bake for 12 - 15min

Salt lightly before serving...

















They are sooooo good! My Toddler LOVES them!

Toddler Snack - Apples

Here is a fun way to Jazz up some apples to make them more appealing...

Apple and Grape Cars.
Using tooth Pics give Apple Slices little wheels!



Using a soda can I have made a heart cutter, I have done this because I didn't have any cookie cutters small enough for this task.



Using the small cutter I then but the core out of sliced apples


What your left with are super cute apple slices!
The ideas are endless...

Cheese and Bacon Puffs

Aprox 1 and a 1/2 to 2 Cups of Tasty Cheese
Aprox 2 - 4 Short Cut Bacon Rashers
1 Cup Self Raising Flour
1 Egg
1/2 Cup Milk



Finely grate cheese
Wizz Bacon through food processor so very finely chopped - Almost minced.
Add Cheese, Egg and Milk to Bacon in Processor and mix until combined.
Add Flour and Mix until a sticky dough forms and everything is well mixed.

Spoon teaspoon size balls onto a tray lined with baking paper.
Cook in a oven pre-heated to 200C for 15min..

Serve Warm or Cold.

Pumpkin Scones

Ingredients:
2 1/2 Cups Self-raising flour
1 Cup mashed Pumpkin
55g Butter
1/4 Cup Raw Sugar
1/4 milk
1 egg



Beat butter until soft, add sugar, pumpkin and egg.
Gradually add flour'
kneed until all comes together with no flour lumps and smooth texture.
Roll dough out and cut into squares or use a scone cutter.
Place on tray and cook in a oven pre heated to 200C for 15min.

Muesli Bars

4 ½ oz/ 6 tbsp Golden Syrup
2 sticks/200g butter
12 oz/330g porridge oats
Handful of raisins 
1/2 chopped almonds
Salt

























Place the syrup and butter into a saucepan and heat gently until the butter has melted into the syrup and stir well.
Put the oats into a roomy bowl, add a pinch of salt then pour over the butter and syrup mixture and stir to coat the oats.
Pour the mixture into the prepared tin and spread evenly to fill the tin making sure the surface is even.
Bake in the oven preheated to 180c for 25 minutes or until golden brown. 
Remove from the oven while it is still slightly soft, they will harden once cool.
Place the tin on a wire cooling rack and cut the mixture into rectangles and leave in the tin until completely cold.

Favourite Pikelets

This is my favourite Pikelet recipe made even better served with Jam and whipped Cream.
Makes Aprox: 15


Ingredients:
1 x Cup Self raising flour
1/4 teaspoon bicarb soda
2 x tablespoons Caster sugar
1 x Egg
1/2 Cup Milk
2 x teaspoons Oil
Butter for frying.












Step One:
Mix all dry ingredients together.

1 x Cup Self raising flour
1/4 teaspoon bicarb soda
2 x tablespoons Caster sugar







Step Two:
Mix all wet ingredients together in a separate  bowl.

1 x Egg
1/2 Cup Milk
2 x teaspoons Oil







Step Three:
Make a well in dry ingredients and mix in wet ingredients with a whisk until smooth.











Step Four:
Heat frying pan to medium heat.
Have a plate ready to put cooked pikelets on.
















Step Five:
Using a tablespoon, spoon a small amount onto a buttered pan.
They will be ready to flip when you see small bubbles and the bottom side is golden.


















They should look like this when you turn them.

















These Pikelets are VERY fluffy and very light.














Done! 
(Don't foreget the Jam and cream!!!)
